    I just placed a small 12# turkey in some brine, going to stuff and smoke tomorrow

    Brine

    2 Qts. apple juice
    2 Qts. water
    3/4 cup kosher salt
    2 cups brown sugar
    1/4 cup rum
    2 oranges sliced
    2 tbs ginger root chopped
    6 cloves garlic chopped
    3-4 bay leaves
    1 tbs summer savory

    it looks good enough to drink. the rum is a great idea.
    I have one in the bucket as we write. coming out of his bath today and going to sprinkle some rub on him. going to try and lift the skin up on this one, see if it will get some better penatration into the flesh. and let set for at least 8 hours then put him on the smoker.

      That brine sounds pretty good. it's hard to find a bird around here that hasn't been crammed full of "solution", but I've copied this brine recipe to try when I do fine one.
