  • Had a fun day

    Made some jerky and did up 8 pounds 50/50 pork and venison hunky sausage. I did leave the pork alittle more on the fatty side and I added a couple tsps. of Nutmeg.



    My little meat prep area out in the garage.




    Just hanging around now.



    Well off to deliver the Jerky

          Thanks, The 5 day waiting period is going to happen with most all of them except the fattest link, it will only get an overnight rest. The aroma in the garage is driving me crazy every time I go out to grab a brew, then of course you need to walk over to the sausage and look at it, smell it even closer and grab a piece of jerky just to satisfy your craving. I think the next time I make jerky I will use the same ingredients as this sausage, I think some paprika would be good in a jerky mix.

                    Rite fine job Lee! Looks great. I know what ya mean bout the smell in the garage. I put Trident 1 out there an the garage is smellin great, can only imagine what it will smell like by spring!

                        way I'd look at it. you'd have to sample one sausage a day for five days, just to make sure that the five day wait was actually worthwhile :-)
                        it'd be a right bugger if you waited 5 days when 2 or 3 would have been plenty.
                        Quality control - as it were

                        great looking sausage.
                        something else I need to try. The kolbasz in the shops over here tend toward bland and greasy, couldn't really fail to improve on them lol
