  • A start to sausage season

    Fired up the vault today I thought maybe she'd give me a hard time cause she took a back seat to the WSM-all summer but she came out smokin and smiling the whole way Started sat out wiyh a 5 lbs batch of ground veny jerky mixed up with a season mix from nesco.I use a 4to1 mixture of thier origanal and hot and spicey that was done in the dehydrater when it was done I did a 5 lbs batch of whole muscle the same way. In the mean time I mixed up a batch ,10lbs ,of trail balogna mixed 7 lbs of veny with 3lbs ground pork shoulder.stuffed into one lb casings and let em sit in the fridge over night so this is where todays story started. fired up the vault to just under a 100 deg put them in for about an 1.5 hrstill they dried then since it's hard to get her to smoke at those low of temps I'll take and put one layer of hot charcoal coalson the wood tray and then put the wood chunks(hickory) on top of the coals that bumps the heat up a little and smokes just right.ran her at abought 130 for 2 hrs then piked her up to 180 for a couple hrs taking the balogna out at an internal of 152or so.into a cold water bath and now hanging out to bloom till tommoro morn. heres a few pics,thanks for reading and looking Bill

                          Man those look real nice. You got the garage kitchen rockin!!! points from me too!

                          I'd have a hell of a time getting my wife to clean up my sausage mess if it was in the garage, I better stay in the kitchen.
