  • Kielbasa time

I made 5 lbs of Kielbasa today using Rytek's recipe. Taste test turned out pretty good.

Will have some for dinner tonight, the rest will be smoked tomorrow.

They will be hot smoked this time.

I have more butts sitting in the fridge for my next batch of sausage in a couple of days.

I think I love you ;{) I set 30 Lbs. out in the garage yesterday AM. Crap..things are STILL hard as a rock. But on the plus side... no worries about "keeping it cool" while stuffing

Nice looking sausage, Dawn. I've found that I have to increase the spice quantity on this recipe. Of course I add some extra garlic and red pepper flakes.

Way to go Dawn. Another sausage head. Let us know what you think. Haven't tried that recipe yet. Another on the list.

Usually mix it by hand. I've got the same mixer. How did it do as far a mixing? May try it for the smaller batches. Thanks.

I added the seasonings to the water, mixed well and then poured it over the meat. Mixed it up using my hands, I didn't feel like changing attachments yet again.

Kielbasa got 4 thumbs up. Personally, I think next time I'm going to add more seasonings.

Yes, it looks a little pink inside even though they were cooked to 180 by the time they were browned. The remaining kielbasa will be hot smoked tomorrow.
