lcruzen 12-06-2009, 05:10 PM Did up some pepper bacon and just some good ole regular bacon this weekend. Only got finished pics. This was a brine cure and want to thank Richtee and DangerDan for the info on the pink cure ratio for brine cure. It seemed to work out perfect.
This is the regular bacon smoked with hickory.

The pepper bacon I smoked with apple.

After slicing I cooked up the scrap pieces. Prolly a BLT for my lunch tomorrow at work.

Ended up with about 7lbs total finished product. Most will be Christmas gift to friends and family.

OK Sooo... a little etymology... it WAS a Brit whom the "sandwich" was named after, as we all know. Where did this "sarnie" thing come from? :noidea:

Pink cure in a salt/brown sugar brine.
Is "sarnie" short for a sardine sandwich?
