  • Getting a shine on the jerky

    I know you can get a 'shine' on jerky with adding honey, i believe.

    I have about 35-45 lbs of venison I am doing, and some pics i have seen on the web, some have a nice shine to it. This first batch, is rather sad looking. GOOD STUFF!, but the "eye" candy shot, so to speak, is missing.

    Any thoughts?

    Hmm from the baking world... a dilute egg white wash before smoking?

        Heh... OK. But the wash cooks at like 120 or so..and that's surface temp. Might be enough to lock out some flavor tho... those heavy protien coatings are suprisingly "tough"

          If you don't want the added sweetness, you can put it uncovered and spread out in the fridge for a couple of hours. It will tighten up, dry out a little and get shiny, sort of like a pellicle on fish. It might help a little with your drying time as well.

            Mine always seems to have a sheen to em. But I do add 1Tbls. BS (brown Sugar) per pound to the mix.
