  • Hmmm sublimation?

    So I have a bunch of jerky ready to hit the smoker. I wonder instead of the oven dehydration, and given the weather here... I think I'll give it a try on a few sticks.

    Ever hang clothes out on a freezing breezy day? This is how they dry.

    I just looked at my outdoor thermo....14.7 degrees and 49% humidity. good luck with this experiment, may take a couple weeks

      Area Amish practice this all winter. You want pics? Just kidding, who wants pics of some old Amish woman's stained period diaper. I don't know what they call them, so that's the best I could come up with.

            lol sublimation is when a solid goes straight to a gas without passing through the intermediate liquid stage.

            Some of the chemistry did sink in, whaddya know :-)

            Allotropes are my favourites.
            One substance that can hold different physical forms at the same temperature.
            sulphur is the classic. can be a liquid, solid and powder all at the same temp.

              What's yer point? Freezer burn is sublimation. Why can't I (given proper conditions) make use of this for dehydration?

              I took chem too. Only science with more exceptions than is allowed by science.

                    how long do you think it would take to freeze dry jerky?

                    what type cure would you use?

                    would you be using a cold smoke for favor to keep with the "no heat" line of thought?

                      Time would depend on RH, air flow and temp. You can freeze dry with a hard assed vacuum- Boyle's Law...temp drop with pressure drop. That's how Sanka was invented (The first freeze dried coffee crystals)

                      It'a all outta my comprehension- just thought I'd toss it out there and leave a couple hunks out and see what happens.

                      Don't much matter how long..it's cured. Can I keep the critters from it's probably the question

                            K now I'm really pissed, first Rich made me look up sublimation, then I had to reconcile deposition with what I generarally accepted it to be. Now I'm wonderin if I got a clean pair of jeans for the mornin" and can't imagine tryin to put them on after a shower when they've been freshly freeze-dried.
                            other than food, , , I'm not talkin to ya no more. LMAO
