    Just took my loin chunks out of the brine and rolled in corn meal. You have peameal bacon, that is then sliced then fried. Its never smoked.

                    Holy crap! Let me guess you make this once a year? LOL! I have had the peameal before, and yes, it was even in Canada! Pretty good stuff! How many lbs is that?

                      Really,I make it twice a year, A lot comes with me on my southern trip and gets dropped off in Ohio, Tennessee and Florida. Nothing like a gift of Maple Syrup and Peameal bacon
