I smoked a 4 lb brisket yesterday. I thought this is so small it should at most take 9 hours or sooo.
Boy was I wrong. It was on plateau from 2 until 7:30 and finally hit 200 at 10:30, I wrapped it in a towel and stuck it in a cooler until the next morning.
bad timing but sooo worthit, not a puller, but a slicer. Good and juicy.
