I am taking the last final exam of the semester tonight and the site campus is having a pot-luck party afterwards.
i used the basic poultry brine and soaked these birds over night. rinsed, half filled the birds with chopped celery, onions and a granny smith apple mixed with some rub. sprinkled with rub on the outside and oft to the smoker they went.
after several hours mingling with apple wood smoke @ 325* they came out the other end like this....
I just could not wait until tonight so i pinched a little thigh meat... oh mercy...
well i am off to make some big bob's white sauce to go with these turkeys,
