  • Christmas Party Turkey

    I am taking the last final exam of the semester tonight and the site campus is having a pot-luck party afterwards.

    i used the basic poultry brine and soaked these birds over night. rinsed, half filled the birds with chopped celery, onions and a granny smith apple mixed with some rub. sprinkled with rub on the outside and oft to the smoker they went.



    after several hours mingling with apple wood smoke @ 325* they came out the other end like this....



    I just could not wait until tonight so i pinched a little thigh meat... oh mercy...
    well i am off to make some big bob's white sauce to go with these turkeys,

                just got in this evening, class the exam went well. the party was very good everyone enjoyed the turkeys, no leftovers that always a good sign. however the white bbq sauce took the show...

                i just hope that someday i return to someone else what has be so freely given to me on this site...

                    Sounds great.... I would love to see the sauce, is it on here? Congrats on the finals.... DON'T miss that stuff at all.
