that can only mean Christmas parties, Christmas programs and time for a tamale fattie or 4....

Cooking today for the company xmas party and my neighbors son's b-day party...

Friday started with the Christmas program......

as for the co xmas party... I am making inside out fajaits.. about 25 of them and 2 fatties with homeade sausage... That sausage recipe is off the top, best sage sausage I have ever had, thank you, you know who you are!!
it called for 1 pint of water, so I did half a pint of water half a pint of Pure cane rum... YUM

You roll out your sausage and then roll out the masa, I do this on the other side of the zip lock after its cut open then just flop it back on top of the sausage. Your fillings on top of the masa and viola!

I am praying for no blowouts.. the chicken mixture was pretty moist...
In all my rushing about I forgot to get bacon.. so these will be my first nekkid fatties! wish me luck!
Everything today was smoked over olive, thx bro! I have been missing that intoxicating smell!

I love the idea of the tamale fattie. I just ate a dozen or so fresh tamales while at my parents and am on a mission to do them myself.

This post just pushes me to get going on it.

Long as it's decent sausage meat and you cook low - should never get blowouts :-)
They do look pretty awesome !

I am sworn to secrecy on that one! A promise is a promise ;)

In the inital post I made a mistake the red chili fattie is pork not beef.. duh..

I have never made the red chili before with the help of my neighbor, I could not believe how easy and yummy it is.

Here is the insides of the pork one ~

1 1/2 cup of water
20 Cali chilies dried, tops off seeds out

boil them in the water prolly 30 minutes, you can see them get soft and the water change color.

toss chilies into a blender, with some garlic powder, a couple of dashes, a small dash of cumin, and a small amount of salt, you can adjust the salt to your liking.

before you start the chilies, in another pot boil up your pork butt, add a bay leaf, boil it till it shreds...
When your chilies are in the blender add some of the water you boiled the butt in (I added 1/2 cup at a time till the desired consistancy I wanted the sauce to be.) Blend together.

You shred your butt then mix with the chili sauce, this will also make a killer burrito...

The green chili sauce was just roasted poblanos and caramelized onions in the blender with salt, cilantro, cumin and garlic powder and some of the broth from the boiled chicken. It came out really tasty, a tad but hot cuz I got a batch of fairly hot poblanos :noidea: Tho the cilantro did tame a bit of the heat.
I will post up the sliced pix in a wee bit!
