  • Just Shy of a Dozen

    I did 11 turkeys this week. Injected and started brining on Wed. Sat in the new big brine bucket (Rubbermaid trash can), then into the smoker on Sat. morning. Pulled this a.m. after hitting 155 deg. I use an old vaccine gun to inject, use Ryteks poultry brine with maple extract added. I rebag in the original mesh bags which I have washed and soaked in vinegar. They hold up very well, and leave a nice appearance. I use shower curtain hooks that I've modified to hang in the smoker. I can get 12 in perfectly. Thanks for taking a look.

                About half are for family, and gifts for friends. The other half are for coworkers. They buy the birds, and I do the rest. I haven't been charging, but tell them it's my gift to them.
