  • Tried some new Wings this weekend

    I was playing around with a new recipe I was working on. I marinated the wings for 4 hours before the smoke. I wanted to do some wings that had some heat for the adults and some kids wings. So, I rubbed all the wings down with an orange based rub I use for fish:



    Then, I smoked them for an hour at 340 with apple wood. After that hour, I dipped the heat wings in a new sauce I am experimenting with and left all of them on for another half hour:

    I was pleased with the way they came out. The kids loved their wings and the adult wings were very tender and mosit. The sauce was just a tad sweet and has a heat that sneaks up on you and ramps from there.

      Looks good, Pete.

      I finally found some srirachia sauce so I am looking forward to trying your recipe for those wings.

                    Well, it's a work in progress but here's the deal. 4 hours marinating in Italian dressing. As for the sauce, I mixed equal portions of Famous Dave's Sweet and Zesty with Sriracha sauce and a half stick of unsalted butter.

                    Like the Sriracha wings, I dip them after the first hour and leave for 15 minutes. Then, dip and flip again for the last 15 minutes. Did the same with these.

                    The Italian dressing really seemed to add a new diminsion to them. When they were done, they we fall apart tender and moist. It was so easy to eat them as the meat just fell off. Not much picking required but a good supply of napkins is in order,
