    i did a couple of chickens the other day and my wife said those were the best i have done to date....but she had a question that i really couldn't answer want to see if some one here can help me out.....
    she wants to me to smoke several chickens and split them and then vac pac for later use....1st ? - i m sure i can do this but would i need to freeze first then vac pac or should i vac pac while it cooled
    2nd ? - when i want to use should i thaw in the fridge and reheat in the oven to 165?? or so , will this be ok to do dont want to make anyone sick
    any help.....thanks

    Vac pack when cool enough to handle then into freezer.

    Chicken has (I'm assuming) already been brought to 165 during smoking/cooking. Reheating to serving temps however you like will be fine :{)

      Mike, I do this quite often. My kids like Smoked Chicken Nacho's, so I smoke 'em up to temps, pull and foil tent to cool. When they have cooled enough to handle, I strip all the meat off 'em.... Then vac pack in portion sizes I need. Rich would save the carcass for soup, but I'm not a soup eatter,
