Its been running for about 4 hrs at 250F its starting to cool down as the charcoal is burning up.It looks like I'll have to top it up every 4 hrs . Drilling holes in the Charcoal bowl looks like a good mod. I'll have to go over to my friends place to borrow his drill. I don't have many tools here. I was thinking of drilling a small hole in the lid to run my temp probe through.
Any other suggestions

I figured you might not have a lot of tools to work with. Drilling holes does help a lot if you can do it.

If it came with 2 racks, ditch the water pan and cover the second with foil. You'll get to temp quicker, but you also use less charcoal. This will lead to less ash, which likes to smother the fire. Thanks to Rich, this has helped my son out tremendously. He's got it figured out pretty darned good now.

Nice price too. Now you can get your smoking fix. :thumb:

Just getting it seasoned and learning how it performs. I'm going over to Scottie's tomorrow to share some previously smoked goodies. I'll bring the fire pan and lid to drill. I won't get to smoke any thing until Jan 2. Some Moink balls and ABT's for the first try.

looks like a fun bit of kit :-)
Can't buy anything like that over here - but if you could it'd be about $400 (wish I was making that up)

How far away from vlap are you ?
He must have a freezer full of fish - sure you could 'borrow' some ;-)
He's always complaining e never gets time to smoke as cooking eats into his fishing time :-)

if you can find 1 of these try this mod.if it fits that smoker.
http://www.smoked-meat.com/forum/showthread.php?t=142

you can usually find them @ lowe's,home depot,or maybe even walmart down there.
just set it on top of the ash bowl that came w/ the smoker & line the bottom of the smoker w/ foil for easy cleanup.

i tried drilling holes & my coal pan & it was a pain. the bottom is easy butthe sides arent'-you don't want to drill your foot(i'm doubting you have a vise there).:thumb:

I hate to Hijack your thread here BG, but I didn't want to start a new one.
Several years ago I gave this
http://i92.photobucket.com/albums/l2/gunslingertom/Smoker/brink2.jpg
to a friend hoping he would catch the fever. He used it once or twice and gave it back a week or so ago. Said it was too much trouble and it was taking up space in his shed. But I guess it's OK to take up space at my place. Friends?
It's been a day or 2 since I've owned one. Actually, the one I owned had a charcoal pan exactly the same size as the water pan and the legs were bolted to the "barrel." I smoked on it, I'd say biweekly at the most. Once my stick burner was up and running, I gave the ECB to my Dad and never looked back. Well, another ECB has reared it's ugly dome, and I feel compelled to use it.
Now.......the nature of my post here is; after reading all the mod stickies about this smoker, are you actually telling that
http://i92.photobucket.com/albums/l2/gunslingertom/Smoker/brink.jpg
this charcoal pan doesn't have enough air flow?
As you can see my friend built his fire on the second food grate while sitting on top of the charcoal pan. Maybe that's the way to go. Seems to me that it would cook awfully fast with the charcoal that close to the food though.
What say ye?

My charcoal pan had no holes in it. I put some in today, and was all set to buy some meat and get at it. MOMMA (miss Needles, my wife) said WHOA you got a fride full of left overs so don't go a smokin anything until the fridge is cleared up. I'm on hold for a couple of days. :noidea:

Without the holes it's hard to keep above 200. You can "tune" it with foil plugs or a small folded over sheet on the bottom. But as is "stock"...that fire only gets air from the top, and it don't work very well. I had one go out on me more than once.

on mine i just had to go with less lump and keep the water pan slam full.
start with just a chimmey of lump, every hour added a small scoop of lump and a bottle of water. little labor intensive but it keeps the temps right. then there is allows the emergency heat dump... leave the door open :thumb:

good luck BG

Thanks for the info. it would run at 250 without the holes, now I have to do a test run with the holes.

No it's not new. It's several years old. But one of those mod stickies had this pan with a with some kinda vent mod. I'm just wondering if this pan really doesn't breath well.
