  • cracked pepper n garlic

    Hey all been on vacation this week and found a 5 # package of inside round in the freezer already sliced for jerky,haven't had jerky for a bit , and the crave was on !

    I love the spice mixes from Hi-mountain for jerky and did this batch with the cracked pepper n garlic ...cured for 30 hrs and then this a.m. I skewered the strips and pre-heated the mes to 145 * and smoked it with hickory

    gonna be ready to bring along to the bon-fire tonight to munch on

    here's the pics of the thin blue and meat ... Happy New Years \_/

                put this jerky in the MES around 9 am , @ about 145 * let it go to 5 pm , opening the door fairly often to let moisture out and keep the element going to keep the chips smoldering ,
                thought I'd post a pic of the finished product before it's starts disappearing

                          Good job on the jerky. Hi. mt. makes a lot of great mixes. I like mixing them up to give a little bite to the more bland ones. your pic really makes me want to make a batch.
