  • Grilled Italian Jerked Chicken

    Did a little experimenting last week as the Mrs was out of town.

    I marinated some chicken breasts in Italian dressing for 4 hours. Then, I put a heavy coat of Jerked Chicken rub on them and wrapped them tightly in saran wrap and left in the fridge for another 4 hours.

    I grilled them at 400 degrees for 10 minutes, 5 minutes on each side. Made up some sauted mushrooms in EVOO and some dirty rice and it was good.









    My brother was over as I used him as a taste tester. Said it was best meal I've ever done. I'm not sure about that but it was good, fast and simple. Not even sure how I feel about that comment

                    As for your brother - lol - does he actually like bbq ?
