  • Mesquite kissed lobster tails

Got the ECB roaring hot for these buggers. Just a bit of mesquite , just enough for the essence. Took only about 20 minutes, enough time to run in and melt some butter. My kids never had lobster before and it was fun to watch them make a mess of them selves.

YEA boy!! Nothing fancy just some good eating.

Nothing fancy? Well..in THESE parts, it would be! Very wise- the "kiss" of mesquite. Could easily drown the sweet meat you have there.

Yea, like I said, I got that ecb hot with almost 7 pounds of well lit white glowing coals, when I put the tails on I threw a handful of chips right on the coals and got a puff of smoke that lasted about 2-3 minutes and that was enough to get the job done. I coulda easily done them in the oven but I have a disease.
