    I brined, rested, and rubbed. with great care and steady thought.
    I havn't thought about 1 important thing.....
    What temp do you smoke a pastrami too?
    It goes on tomorrow about 8 or earlier if y'all say so....

            Usually the pastrami is steamed after smoking...to what point I'm not sure. Perhaps it's just a steam table thing to keep it hot for serving. I have never done a pastrami. Guess I could try a point, as I'm about to pull 2 packers outta the curing brine today :{)
