Well, as some of you may know, I'm getting ready for St. Patty's by curing a couple briskets for Corned Beef.
I pulled them out of the brine/cure today after a week and pulled off the -points. Hmmm... pointz LOL! See- all these pastrami posts making me NUTS! Sooo...
I tied the pointz up and seasoned with CBP and coriander, and onto the WSM for a smoke session... sure SMELLS good...
