  • Shrimp Scampi on the Fire

    This recipe is one that Smoken Yankee posted. It's for indoor cooking, but I'm having issues with my natural gas here on the farm...sooooo...I made it outside over a small wood fire.


    Smoken Yankee's recipe...
    4TBLS. oil
    3TBLS butter
    1TBLS minced garlic
    20-40 pelled med/lg shrimp
    1/2tps crushed red pepper
    1tps oregano
    1/2tsp salt
    2TBLS flour
    1/2 cup white wine
    3/4 cup chicken broth
    and 1tsp lemon juice

    I combined my wine, chicken broth and lemon juice in one container so it would be easier to carry outside. lol
    The flour, red pepper, oregano and salt....



    I sauteed my garlic in the butter and oil...



    Added the shrimp, red pepper, oregano and salt...




    Stirred in the flour....



    Added the broth, wine and lemon juice and let it simmer for 10 minutes...



    The finished shrimp scampi...



    Served over rice...

    It was tasty, I liked the added flavor of the wood smoke too. :)

        dang it huh!!! i love scampi and that looks good, i thinken this fall when we head west need to make a little detour and stop by for lunch!!! great job again J !!!

                      Looks awesome.
                      This is what I made up.
                      I HIGHLY recommend trying with the water chestnuts. It adds a delicate flavor and a nice crunch.
                      Yall know I'm a weird f'er.
                      I eat this with chopsticks.

                      SHRIMP SCAMPI

                      2 Lbs. Large Fresh Shrimp Deveined, TAIL OFF
                      ½ Cup Butter
                      ½ Cup Olive Oil OR Vegetable Oil
                      2 TBSP Lemon Juice or White Wine
                      ¼ CUP Minced Green Onions Incl. Some Tops.
                      ¼ Cup Fresh Snipped Parsley
                      1 TBSP Minced Garlic
                      1 Tsp Salt
                      ¼ Tsp White Pepper
                      1 Can Sliced Water Chestnuts (Chopped more)
                      Lemon Wedges
                      WHITE RICE 2 ½ - 2 ¾ Cups Minute Rice

                      Rinse Shrimp, Pat dry.
                      Arrange Shrimp in Single Layer in pan.
                      Heat Butter and Oil in Pan. Add Rest.
                      Cook till Shrimp are done.
                      Put Shrimp on platter of rice and pour ½ the liquid on top.
                      Garnish with Some Fresh Parsley and Lemon Wedges.
                      Pinot Grigio is excellent with this.
