Let's say you smoked an awesome whole pork loin the other day that was so good, yet so big, that your family of 5 couldn't inhale the whole thing. What do you do with the leftovers?
The Fat Bastard.
First, fry up some bacon. Enough for 2 slices per sandwich. Reserve the grease.
Then, take some of those 1/2" thick slabs of loin out of the leftover bag and start warming them up in the pan.
When you flip them over, put on a slice of cheddar and cover the pan to melt the cheese and help the pork to warm through. When you pull the lid, don't forget to savor the aroma....
Serve straight to toasted onion buns with a couple slices of bacon and some garlic mayo. Add tomato and onion if you desire....
