Well it's a slow Sunday morning and thought I'd share some breakfast with ya :).
I took a nice chunk of yesterday's smoked PR and did it up with some over easy eggs and lemon fried potatoes. The potatoes are great to use as a dinner side too :).
I use red potatoes only, they are sweeter, starchier and hold up better. The red potatoes get cooked in the microwave. When tender they get quartered or chunked. I also dice up a small onion.
Start with a little evoo in the pre-heated pan. I use a medium/high heat.
Toss in the potatoes and onion. Let them go a few minutes, tossing a couple times.
Then I add in a good amount of lemon juice, about a 1/4 deep in the pan. Toss the potatoes a few times in the lemon juice.
When the lemon juice has been absorbed/evaporated, I sprinkle on some lemon pepper, granulated garlic and basil.
Drizzle a little more evoo over the potatoes and fry unit they are nice and crusty brown. The caramelized onion, lemon and potato starch make an awesome coating. Goes great with the little tartness of the lemon juice.
In another pan, pre heat some evoo and get it nice and really hot. Toss in a nice chunk of leftover PR. Leave just long enough to sear and warm the middle. End cut works great here.
I take the PR out of the pan and drop the eggs right in the same oil.
Breakfast ready with a nice cup of coffee.
