  • texas red - chili that is

    following the CASI rules.
    here's my recipe-all to taste. this is the mild version.
    2-3 lbs smoked sirloin tip - cubed
    1/2 small yellow onion
    1/3 red onion
    1/4 cup minced garlic
    4 cascabel chiles -seeded,stemmed,& ground
    2 tbsp ground ancho chiles
    2 tbsp oregano
    cumin to taste-add a lil 5 mins before serving too.
    1 6oz can tomato paste
    paprika
    maseca brand masa- for thickening if needed.

    cascabels ground in the spice/coffee grinder


    done in the fancy bowl.

    I've been tryin to use the dried peppers and come up with a chili powder of my own. I will definately give this one a try. Thanks for the post. It may be the missing link. I've got dried Cascabels but they look very different, they are the size and shape of small tomatillos? different variety?

                        I also am used to seeing the type that you mentioned. When using the dried peppers for making chile powder, leave out any stems and seeds as they can give off a bitter taste. Morro Bay is one of my old stomping grounds...

                          I have heard that about the seeds... interesting. My grandfather said they add flavor and heat... in a dish - not dried. But then again... he'd go out to the garden and chomp on Japs with his salt shaker Guess I know where I got my love of heat from eh?

                              just google CASI- that is original cowboy chili(maybe minus same okras)but that is terelingua,texas world championship chili by rules, no fruits or veggies (other than jalapenos),no beans, to the comps- i would have lost because what you see in the close ups you may think are seeds is actually minced garlic i didn't mash & puree.
