    Chicken & Sun Dried Tomato. Gonna get this gig done before the race starts & while the Beer level is down.

            If you have to make a trip to the store I know Why. Beer level is "EMPTY" not low.

                Work in progress. Louie & I have a Molcajete, no Tip that ain't a weapon! For Richtee that ain't something with Tequila in it. We use it to crush/bruise spice to release oils. I like it!



                Casings outside in, Louie is a bad ass with this gig!



                Ready to grind! Me ready to get in a Beer & settle in for the race!


                This part of the gig is done! Louie wants em smoked with Pecan. Ken, what a smell & flavor. What was left in the grinder screw & stuffer we put in a cast iron pan to fry......I like it!...Louie tooooo.

                      Those are looking good Mike. I see your going to smoke them. Did you add a cure to these? Thought about adding to mine next week and smoke at 160 till they get to 152. Or you just doing the fresh sausage thing and smoke around 250? Not sure which way I'm going to do them.

                              Without a cure don't let them sit too long before chilling to 40°. You did take them to 165° as well, right? NO chicken can be safe without that. Cure does NOT kill samonella, nor will anything but temp. Oh and bleach, but.. Sure look good tho.
