  • Question for you cheese heads

    Are there any cheeses that don't smoke well, the Secretary of War and Finance makes a pretty mean mac n cheese, I was thinking of trying to smoking some cheeses for her to use in it next time.

    Cream... heh! Whiz... ummm a soft bleu- unless you have a real cold smoking setup. Chedders and stuff for Mac and Cheese should do fine. And you'd only need to do one type..if others are really heat sensitive.

    Easier... cook it IN the smoker.

          Hell I dunno... but the best bet is cook the M&C in the smoker if you want to try it. Prolly be good...I like double smoked ham in mine.

            I've smoked, cheddar, stilton (creamy blue cheese) and some others - no problem.

            Cottage cheese - Hmm, not sure how you'd go about that and I can't stand the stuff anyway lol

            basically if it's firm enough to stand on the sheet - it can be smoked. as long as you keep it cold.

            Smoked cheese is great for cooking too.

            Having my first attempt at home made cheese in a bit as well :-)

            Going to attemot a garlic and herb queso blanco.
            Which according to the blurb in the book - is a great cooking cheese as it doesn't melt.

              Start out by smoking whatever she likes now. If it's a really soft cheese, put it in a bowl and turn it half way through.

              I would give Velveta a shot if it's going in Mac'n Cheese...although it may not technically be a cheese!

              In this cold weather, you should be able to do it. Never had much luck getting other cheeses to fully melt in the Mac.
