Didn't make it, but I smoked it!

We got Sharp cheddar, pepper jack, garlic herb cheddar, slab of mozzarella and fresh mozzarella Ciliegine.


These little mozza balls are so friggin good, I musta ate a dozen or so during the whole process

I rolled 1/4 in Mad Hunky, 1/4 in Montreal spicey steak and 1/2, I left alone.
The MH and MSS are unbelievably good. I had to vac pac em rightaway so I would stop eating them and give em a chance to bloom. Can't wait to test the finished product.





Smoked 1 1/2 hours over apple.

Nice variety there! Hmm would have never thought to use the MH rub on cheese. Hell or the Montreal either! Good idea there, expecially with the somewhat "plain" flavor of mozz. Now the hard part... waiting to eat!

Yeah I forgot to mention that, I just figgerd that smoke cheese is good, smoked nuts are good and wine is aged in charred wood barrels, a little smoke aint gonna hurt anything. I tried a little before I vac packed, but my taste buds were blown out from all the mozza balls now I gotta wait till next weekend.

Thanks for the belated points CA. Gotta admit, I left a few of the plain mozza balls in a ziplock, (strictly to monitor it's blooming progress) getting better all the time.
