Boneless thighs can be purchased in my area, well, boneless..... and are also available with or without the skin in some markets. They are also pretty easy to bone if you cant get them boneless. Never tried it with chicken though I get bonless, skinless chicken thighs at Sam's. There is still some fat on them. I leave that and grind it too. Didn't need the skin. In the 25 or 30 lbs. of chicken sausage so far, it's worked fine. The cheapest way is to debone yourself, but not the easiest. Mad Hunky & Chicken..... :thumb: curious aardvark 02-16-2010, 05:11 AM haven't done chicken sausage yet - but when I do I'll be doing wutangs lime recipe - first sauage recipe I've actually downloaded and kept from the site. :-) Can't help you on the 'brats' (as it just seems to be a generic word you lot use instead of 'sausage') But polish flavours would work well with chicken. wutang 02-16-2010, 08:03 AM I just bought bonless/skinless thighs but it probably would be cheaper to just buy whole thighs and do the work to get them boneless/skinless.
