  • Smoked Chicken Salad Stuffed Shells

    Yesterday afternoon I drug out Project X and gave her a run... I thought I would do something a bit different.. These can be a good summer time cool snack of a great party appetizer....


    I really need to put a coat of paint on her too.....


    Getting the pit up to temp..




    On goes the country style pork ribs and the chicken thighs..







    About 2.5 hours later we have yardbird...






    After the meat has cooled, Fine chop, also have 1/4 cup fine chopped onion, celery, and shredded carrots..







    Mix well.....






    Add 2-3 TBS of Mayo or Miracle Whip... if you like..MW..Also a squirt or two of mustard... slat & pepper..







    Place in frig while shells are being cooked.... After the shells have cooked to al dente... rinse in cold water and place in frig for 20 minutes..



    Fill each shell with 1 TBS of salad... dust with paprika or like mine a shake or two of Smitty's....

            Ken, that right their is fantastic. only thing i'd do different is use mayo, Miracle whip is just to sweet for me.

            But no doubt, I will be trying this later this summer.

            just thinking here, this could fall into the smoked leftovers area.

                I'm going to have to try the concept... scratch the veggies and MW... maybe make it a smoked chicken pesto filling or a white wine bechamel with some toasted bread stuffing as filler... mmmm.

                      I'm not one for any type of "salad" dish but that is one I'm definitely going to try. Love your recipes, Ken. Thanks for sharing!
