  • My name is Keith and I am a breadaholic

    Tom the Gunslinger got me into this about 2 months ago and I am now officially in search of the perfect crumb. My bread skills are still lacking, which is making it even worse.

    Along with several feeble bread attempts, I have made cinnamon rolls, pizza, and pretzels. Someday I might make a bread I'm proud of, but until then I shall keep on keeping on.

    My sourdough starter likes me!

          Dang that is cool....Grew up around bread making family,but still havent done the sour........Mom hated it,but getting intrigued by the stuff folks are doing on forum with the sour...

            I used to bake all the time and seemed to just fall away from it. That starter of your's is kick ass bro. Have fun with it.

              you been letting that starter look at bread porn again

              Bread is cool.

              have to admit most of the hard work round here gets down in my morphy richards fastbake :-)
              My all time favourite kitchen gadget.

              where else could I just dump water, seasonings flour and magic yeast powder into a machine and come down in the morning to a fresh loaf of bread :-)
              Oh yeah and no real washing up or mess

              One of these days when I've got no electricity I might do it the way you guys do. but till then.....

                Nothing wrong with starter that runs over (except in the fridge). I usually don't fill my jar quite that full. I give it about 1 1/2 inches of headroom for expansion. You'll find that the more you use it, the better it gets and the better you get at baking it.

                    Well Mo, I had to do something with that starter before it took over the house.

                    I've been experimenting with higher hydration levels(more water) to get a fluffier crumb. I tried some bread with a 70% water like the pros do, and ended up with another failure. But after scouring the internet today, I think I've discovered the secret to being able to work such a wet dough. Unfortunately I won't get a chance to play around with it until Friday.


                    Until then I guess I'll keep dreaming too.

                        Have you seen the site thefreshloaf.com? I have been doing the 'french fold' and the 'streatch and fold' technique for the higher hydration levels that several memebers use on that board and I really like the out come.
                        Are you familiar with the technique?
