  • Boars Head Shoulder Bacon

    Well, here be another batch a Boars Head Shoulder Bacon, half the batch fer me the other half been sold!



    Bout 13 pounds a shoulder trimmed an ready fer cure.



    All bagged with cure, now the long 12 day wait!

    These will be massaged ever other day, then on the 12th day they get a two hour soak before sittin in the fridge fer awhile ta develope that pellicle!

    After all that, inta the smoker at 200* with some nice maple.

    Looking good Tip, sure hope them folx over at Boar's Head don't get pizzed with ya about the name. :-)

          Big Red Q - I hear tell there be some place called boars head, I figure long as my business ain't called that they shouldn't complain, can't thin a little feller like me gonna bother em much.

          Rich - Well, there be pork shoulder in there, some molasses, brown sugar, cure an a few seasonins. eeehhhumm ifin ya get my meanin. So fer seems like it gonna be a good seller!

              Are they a deli type place erain er what? I ain't really ever seen one, somebody while back told me there be a place name Boars Head, guess they can fight grandpa over the name! There stuff anygood?

                    yep tip, its a large grocery with a huge deli section, most everything they have is boars head brand, spendy stuff i might add!!!

                      Tip, it might be better to be safe than sorry and write them to see if there's a problem with your using the name for your bacon. I'd hate to see you get a lawsuit slapped on you over the name you're using for your bacon.
