  • English Apple cake with homemade lemon cream cheese :-)

    Had to make a cake the other day and invented this recipe, enjoy :-)

    Ingredients

    4 oz butter (softened or not)
    4 oz light brown sugar (must be brown sugar)
    4 oz dried fruit, raisins, golden raisins etc whatever you have or like
    1 tsp vanilla extract
    6 oz self raising flour
    1 large cooking apple, or 2 eating apples or 3 small eating apples.
    2 large eggs or 3 small eggs (whatever you got)
    Approx 4-6 oz cream cheese. Philli light works fine as does home made lemon cream cheese
    8 inch greased brownie or baking tin


    Method

    Add butter sugar and vanilla to large mixing bowl and microwave on high for about 20 seconds (just softens the butter up)



    Mix well till the butter and sugar is soft and fluffy (no not like a bunny rabbit)
    Beat the eggs in a seperate bowl and add gradually to the butter and sugar mix. Beat till smooth.

    Peel and grate your apple/s into the bowl.



    Mix it in and then add the flour, spices and nutmeg.



    mix the flour in thoroughly and add the dried fruit.



    Scrap the mixture into the baking tin and smooth so that the surface is even and the mix is level.



    Then use a teaspoon and scoop small blobs of cream cheese and evenly cover the srface of the mix. Press the cheese lightly so that most of it is below the cake mix surface but some is till showing.



    Bake in the centre of a low-moderate oven for 40-50 mins.
    Or until surface springs back or skewer comes out clean.
    I cook for 30 min and then add extra time 10 mins at time and check. so far both cakes have come in at exactly 50 mins on gas mark 4 - around 350
    All ovens are different so check at 30 mins and regularly thereafter.






    This is a very moist cake with caramel (why you use brown sugar) and apple flavour. The cream cheese compliments it perfectly and adds extra flavours and textures.
    I've made two of these so far. One with light philli and one with my own lemon cream cheese. Both did not last out the day :-)

    If you want the cup sizes - this is a standard victoria sponge mix with brown sugar instead of white and 1/2 again as much flour ('cos of the liquid in the grated apple).
    Dried fruit and spices are optional or whatever you prefer.

    This is an easy and quick cake to make and one I guarentee you'll be unable to only have the one piece from :-)

    And it's a novel use of home made cream cheese ;-)
