  • My First CB Attempt

    A few of you know that I have not been confident in this area. I have never cured any meat before and this was a scary area for me. Well, I finally got the courage to give this a try and I'm sooo glad I did. I had a 4lb loin that I cut in half. One half I used TQ and sugar. The other half TQ and brown sugar. Here they are just bagged for the cure:



    I left them in the fridge for almost a week. Here they are soaking.



    I only let them soak for about 30 minutes and did the fry test.



    Tasted pretty good so off to the smoker with them.



    I know I should have trimmed off a little more fat on the one before the cure, but I cut my finger while doing so, and said the heck with it.

    I smoked them with hickory until internal temp reached 160. I started late last Friday so by the time they were finished, I just let 'em rest and then put them in the fridge. I sliced the next morning and used some for breakfast.

    Don't laugh at my slicing ability (need meat slicer now) I was very surprised at how well they turned out. Next time I will let them soak in water a bit more and try some different variations. Thanks for checking out my q! Thanks also to those who gave words of encouragement

      I knew you were gonna bust that bubble eventually

      Both look very good, and look delicious. points for the nice CB, and for venturing from you comfort zone and trying something new AND succeeding at it.

      now about that slicer, I live right close to ya as you know. Next time or for that matter, until you get one. Any time you need to slice up some meat give me a hollar, You can come up and borrow mine. I will pm you the phone #.

                          CB cure

                          Congrats on some great looking CB. got some
                          on to cure for sun smoke.
                          If there is an easier thing to cure and smoke i don't know about it.
