View Full Version : Bacon wrapped stuffed chicken breasts with pics

I am entering a few contests this summer to see how my bbq stacks up(myself, my friends, and family think it is the sh*t,) but I need to know before I start up my catering business.

These are not KCBS events, just local events that have either a chicken entry, or a wild card entry. So I am working on that aspect of my smoking.

Got some chicken breasts(buy one pack get one pack free), and decided to pound them out, and roll them around grilled asparagus, fontina cheese, and fresh mozz, then wrap in bacon. Turned out pretty good(my wife was happy to not be eating ribs.... again...), next time Ill use de-boned thighs i think. Pre grilling the asparagus was a nice touch as it was tender and excellent.

Those look delish! I've been messing around with "chicken rolls", and someone here posted a stuffed chicken breast (slit it instead of pounding and rolling). Might be something to consider if you're going into the buz - would save a lot of prep time if you're cranking out a bunch of those.

gotta get some green veg in my diet somehow...

I grilled the asparagus for maybe 15-20 seconds on the Weber at really high temps, then sprinkled a little salt on them and let them cool. Really maabe them tender and I enjoyed the grilled taste they had.

I really like the asparagus and the way the finished plating is so eye apealling. Did you hold on to a good amount of cheese?

it did hold the cheese, that was the main reason for wrapping with bacon, I was able to seal up the enfs, and the seams of the roll. The slices of fresh mozz really holds up well to the smoker.

that garden of yours.... I am really envious of all the good stuff you turn out.

the asparagus was really sweet for the first I have had this year. I can see eating alot more asap.
