  • Grilled Chicken Enchilada Casserole

    Took 2 tablespoons of Rich's Mad Hunky rub and added a teaspoon of my red jap chipotles and grilled the rubbed breasts over red oak/cherry at 320 degree...






    Was able to get some garden product in the chicken mixture...Fall planted scallions,quart of tomatoes and roasted green chiles...





    Chicken mixture is Garlic,Onion,shredded chicken,a beer,cayene powder and tomatoes.After juice reduces add green chiles and olives...





    White sauce...Flour,salt,cumin and corriander.Whisk in milk and add 2 egg whites...




    Started with white sauce




    2 softened tortillas cut in half




    2 cups chicken mixture





    Little more white sauce and a 50/50 mix sharp chedder and Monterey Jack cheese..





    Repeat two more times and bake 40 minutes at 350 degree...Then added some scallions,olives and cheese mix to top and baked 10 more minutes...




    Served with some sour cream and salsa....




    Beautifull day here...This was at 6:30 p.m.

                    Alex,

                    Man you ought to have a TV show...I'm thinking something between Paul James (the whacky garden guy) and a Bobby Flay Throwdown type of thing (he likes peppers too). I guarantee you can out garden and out "throwdown" both of them.

                    Sweet looking dish, and It has given me an idea for something else. for the inspiration.
