  • Smoke Generator

    This winter I have not had the time to process and smoke sausage like past winters, it is looking like last seasons venison will become sausage in the spring or/and summer. So I am researching these smoke generators, anyone here have experience using them? I am looking at purchasing one from Porky Pa's or possibly making one if someone has plans with a shopping list of parts I would need to make one. Thanks in advance for any advice given.....

      Hi MossyMO...I did a thread on the smoke daddy over at smf. Bunch of close up pics and a little video of it in action.

      One thing the smoke daddy has going for it over the others is the ability to use wood chips. I use a mix of chips and pellets. Personally, I don't care for the pellets alone. It worked pretty well once you get the hang of it. I never tried cold smoking with it, but should go ok.

      For the price Porky PA sells the medium I don't think it's worth building one. I priced some materials and it just wasn't worth the bother. Check out the thread :).

        dude, you got that SS. Fridge smoker.........why aint you using that?

        its propane.......turn down the heat, or cut a hole in it, and run a pipe to pump smoke in, like what Cowgirl does.......easy enuff to seal that hole up to hot smoke !

          I had read your thread previously, great review you gave the product; very thourough. Do you feel pellets are needed, or will wood chips work fine alone?

          That what I am looking at hooking the smoke genny up to, then the smoke is not piping in from a heat source.

            I have a Smoke Pistol that I bought to cold smoke fish and cheese. I was going to try it on some snack sticks this weekend and write a review of it when finished. I did pull apart a cartridge and learned they can be easily "refilled."

              Sorry I missed your question Mossy.

              The pellets kinda act like the fuel to keep things burning, but not impressed by the flavor of them alone. So I layer in handful of pellets then a handful of wood chips.

              If I have time, going to play around with some new ideas for loading today. At least with the smoke daddy you have the option to load anything you want to try in there, chips, pellets, charcoal. Plus the fuel is cheap .
