Well...we've decided to start eating healthy again. So I won't be posting much in the way of ribs, pp, or any of the fatty greasy stuff I love :). At least not this week...LOL. Promised to make an effort, so here is a salad topped with pork tenderloin I made for supper :).
Picked up a couple 1.25lb tenderloins.
Injected with a little fat free italian dressing, gave it a spray of pam, a sprinkle of Ms Dash garlic herb and some italian seasonings.
On the smoker at 225, using some hickory.
After 1.5 hrs, internal temp was 120.
Finished in 2.5 hrs, internal temp 155.
Nice and juicy, we like our pork tenderloin medium.
Made up salads out of mixed greens, red onion, cuks and croutons. Cut up the tenderloin and topped with some onion vinaigrette.
This was actually pretty good..lol.
