  • Fresh cut apple wood

Scored a bit of fresh cut apple wood last weekend. Someone on another forum once told me that as long as I'm just using a couple chunks of it with charcoal (in a UDS), I don't need to season my wood - so can I use the stuff I got last weekend, which was fresh cut?

    I'm double smoking a ham on Sunday . . .

I have heard some folks use all unseasoned wood! I suppose as long as you can keep it going, try it.

I have a small brinkman verticle and I will just go out to the apple tree and cut off enough to do the job with great results. I would use it

It definitely is better if you let it sit and season for a while. Like Rich says it also burns easier. Having said that though, it's awfully hard to just let it sit without using it. Whenever I can I hit up the local orchards every year after they do their pruning, that way I always have some on hand.
