    Lll the talk about legs and im easy to influence.
    Used richtees brine for th eone forum page, cheated a little used poultry spice. Having fresh rosemary to baste would have been unreal but...



    And no I dont slice my turkey legs but wanted to see the in side clear cut. These where the best turkey leg ive ever tasted.

    That brine was right on

      Damn... I'm going to the store! Chix split breasts on sale for $1.19, and getting a half dozen turkey legs! They be just SOOO fun to eat too! Grrrr! Ripsnarltear!

        Hot damn those legs looked good!
        Been a while since I have done any, after seeing those how can I not go out and pick some up?

        Loved the smoke ring, thought it a bit strange you sliced a turkey leg until you explained why

                    Those are some great looking Turkey legs. I am jonsing for some smoked poultry right now. Did a Ham over the weekend and never took a single pic

                      those some great looking turkey legs mister Z. they have a threshing show i attend every fall and they have some great smoked legs there. been always meaning to try and make some. maybe now i will. to you for the great looking turkey legs!!!

                              I think it was 3/4 cup kosher to a gallon of water.Off hand I dont remember his exact amounts but he says to simeer the saltwatre with rosemary,thyme and onion, believe that was all he mentioned.Then add about a cup of wine. Bring it down below 40 degrees(right) then use. I brined for 5 hours, the salt content was perfect.
