I've had good results with this. Basically a 50/50 mix of salt and sugar.
30 grams salt
25 grams brown sugar
4 grams black pepper, freshly ground
dill weed, fresh
Mix the salt, sugar, and pepper together. Lay plastic wrap on counter and sprinkle with salt mixture the sized on the filet. Lay filet on top and coat heavily with salt mixture, cover with dill, lay other filet on top and sprinkle with remaining salt mixture. Wrap the "sandwich" tightly with plastic wrap. Place the package into a baking dish and weigh down with heavy food cans. Place in the refrigerator for 3 days, turning every 12 hours. Scrape off and wipe all spices and serve.

Every other fish thread this last week has been gravlax.

4 or 5 of us have made it all with slightly different recipes :-)
Just look down the fish thread.
lox is cold smoked salmon. This is ashorter saltier cure and a long, gentle cold smoke.
Gravlax is scandanavian and a much longer sweeter cure.
But like I said, just look at recent fish topics - most of them are gravad lax :-)
