I love to dabble with asian food(to the the best of my limited knowledge). Had a hankering for some sesame wings so I throught ogether a nice sauce/glaze for my crispy wings. I like to toss the wings in flour then let sit for 20 min or so to really adhere to the wing and make a nice crispy coating for the sauce to stick to.
I dont always have a recipe so this one is basically:
carmelized sugar and asian black vinegar to make a base
had some wonderful chicken stock from a soup last night so about a cup of that.
Toasted garlic
oyster sauce and a bit of soy and sesame oil.
and a crap load of honey for sweetness
reduced a bit and tightened with cornstarch
finished with some toasted sesame seeds.
Gave the smoker a break for today.
