Fire it up 04-08-2010, 10:08 AM That's right, sweet jersey Fresh honey infused with the power of the hottest pepper in the world :faint:
My Sister told me that she had stopped in a little store on High Street that sold candles, jams, and other assorted nic nacs from Amish country (Lancaster, PA).
She then told me they carried honey that was infused with the dreaded ghost pepper, the bhut jolokia!
Anyone remember The Simpsons episode where Homer ate one that was "grown deep in the jungle primeval by the inmates of a Guatemalan insane asylum"?
So of course when I heard this I almost couldn't believe it, something like this actually showed up in my little town, in South Jersey the bhut jolokia has made an appearance!
Hopped in my car and headed out.
It was a little place, just some nice lady who loves Amish stuff and sells it during the evenings. She is a school teacher during the day.
So without further teasing I bring you Bhut Jolokia Honey...

The flavor was very good.
A nice sweetness from the honey and then like a flash a pungent sensation hits your tongue and a small yet sharp heat fills your entire mouth.
It lingers for 15-20 seconds then begins to dissipate leaving you with a slight burn in the back of the throat and a fading sweetness that leaves you wanting more.

I like that....I think i will take some smaller 8 ounce bottles from the honey hives and try different peppers...The amish always seem to be doing different things with fresh produce...Real nice amish market in annapolis...They might have it...

almost shot some points at ya for a great idea. But on further reading it said "on top Mmmmm". Not as I read, on top of mom.:hail::hail: any way it's caused a good thought.:lol:

Even a small bit of fresh bhut will heat things up for a long time...not just a few seconds...
So they just shove a dreid pepper in the honey and let it rest...I may need to try this...:whistle:

From handling the pepper I am guess that they slowly heat the honey with a pepper (probably dried) in it to rehydrate it and infuse the flavor.
Gonna make some chipotle honey this year once the garden is in full swing, hope it comes out tasty!
SMOKE FREAK 04-09-2010, 01:19 AM Im sure they would use dried...good chance of a fresh one goin ta spoil in the honey I think. Chipotle sounds good but you may not find much heat in it. The sugar in the honey will hide the heat very well...

Honey is the best naturally occuring antibacterial substance on the planet.
As long as you make a few slits in the pepper so the honey can get inside as well as out - should be zero chance of it going off.

Gonna give it a try.
As for the heat it would be fine with me if there was little heat as long as it still had the flavor which is more of what I want out of a chipotle version.
Growing tons of jalapenos this year and among them are a few no heat jalapenos that I'm going to use mostly for no heat chipotle and see if it still contains just as much of that great smoked flavor.
williamzanTzinger 04-09-2010, 02:35 PM Dont know if you saw the Bobby Flay fried chicken throwdown where is secret approach was to make a jalapeno honey sauce.Ive done it many times since. I now buy the green tabasco and mix it with honey(cheater)
