I didn't do a lot of grilling or smoking over the winter, but I did do a lot of cooking. I used Rich's Rub on these burgers, they were awesome. It made a little crust on the burgers and seasoned them very nicely.
Bacon Cheddar Pretzel Burgers with Caramelized onions

80/20 hamburger meat
Cajun Seasoning (or your favorite rub)
Cheddar Cheese slices from deli (also good with blue cheese)
1 whole onion slice per burger (don't separate into rings)
Thick Bacon slices
Pretzel buns or another rustic type bun
melted butter and or buttered flavored oil
Garnish with baby spinach, tomato, mayo etc
Place a whole slice (not separated) or two of onion on an oiled griddle or cast iron skillet, squirt the top of onion with melted butter or butter flavored oil, salt and pepper the onions, let cook until golden brown.
Make a ball with hamburger, flatten it, season with cajon seasoning (I used Rich's Rub) place in cast iron skillet, brown on both sides, top with browned onion, then with some cheddar cheese, and bacon slices. Squirt or drizzle some water around the hamburger (to create steam) and immediately cover with lid to melt cheese. I have a little domed metal lid that works great for this, it fits right over the burger. Butter buns, brown in skillet or under broiler.
