  • Some Sweet Italian and Breakfast Sausage

    Found a new meat place in town a few months ago. I picked up a 20# butt, fresh, nothing added. The guy gave me a tour of the place, showed me his smoker and gave me a bunch of seasoning for some diff. kinds of brats. Told him he just got a new customer!

    Heres the butt ready to get ground up


    All ground up


    The sweet Italian sausage


    Breakfast links and some bags for patties


    I used sheep casing for the breakfast links. 1st time I've used them. Wont be the last but I'm not going to mess with them for a while. What a pain! Kind of like trying to open the middle of a piece of string. That's why I have 4 bags there. I gave up. We'll try the breakfast links in the morning and the Italian at noon. These were both from Rytecs fresh sausage recipes.

            mark that is some great looking sausage, especialy the ground..... that is some great looking ground pork. i have made ryteks breakfast sausage before so i know you are in for a treat... great job

                Great looking sausages!

                Its nice to find a shop thats so proud of they're work/enviroment that they conduct tours. I had that happen with a plant and I continue to give them my (almost) weekly buisness. I just wished I had a camera at the time I got the walkthrough.

                Soon I'll be back into the sausages again and I'll have to put some time into breakfast sausages.

                      Made some biscuits and gravy this morning. Used some of the bulk breakfast sausage and also did up some of the links. Not spicy enough for me, but my wife loved them. That's what counts. The more she likes it, the more I can make!
