    I'm going to give this a try. Here is what I've done so far.

    Semi frozen venison chunks and pork trim ready for the grinder



    First grind



    Spice mix added



    second grind



    packed into the molds and going into the fridge overnight



    Tomorrow unmold and smoke, Then let rest in fridge overnight, Monday slicing and packaging. Also sampling

      did you make your own seasoning or use the pre-packed one ?

        Venison Bacon

        2 lbs. Venison
        2 lbs. pork
        3 tbs. coarse salt
        ¼ cup brown sugar
        1 Tbs. gelatin
        1 tsp, special meat binder
        1 tsp cure #1
        1 cup ice water
        Grind pork and venison through a 3/16 plate, mix with ice water and spices, regrind. Mix well and pack into a 9x9 baking dish . Let set in the fridge overnight to set. Unmold from the baking dish and place in the smoker.
        Smoke @ 120 for 1 hr to dry. Increase to 130 and start smoke. Continue to increase smoker temp to 150 and smoke for 2 hrs. Finally increase temp to 170 and smoke to an internal of 155. Cool then refrigerate overnight. Slice and package.

                Almost a disaster! the meat fell through the grill



                Turned out OK but I lost quite a bit and the remaining pieces had a funky shape.

                taste was terrific, lessons learned. Line mold with cling film so un-molding is easy, and smoke on a finer mesh. Definatly a do again.

                  I love me some venison bacon! Not sure why yours was so soft that it fell through the grates. I use a seasoning/cure mixture that I buy online, pack the seasoned meat into disposable tin foil pans and let them set up overnight in the fridge. Then out of the pans and into the smoker. Never had trouble with the "loaf" being soft. Maybe the mix I buy has some sort of binding agent . . . anyway, nice work on saving what you could!

                      I think it was the glass cake dishes that did me in. I couldn't get the meat to un mold and had to bang it to get it out. In the process I think it loosened up. I didn't want to use aluminum pans as I was worried about a metal taste. Next time I'll line the pans with cling film and it will come out easier , also I'll use a finer screen on my smoker grill.

                          Well, I'm glad you tried it. It tastes as good or better than the Curleys.

                          Had some of the same issues as you. Not sure if it's too much water or not enough binder. Curleys will come out of a disposable aluminum pan without plastic wrap, and not melt through the rack. I'll be playing around with it a bit more in the future. Love the stuff and would like to make it myself.
