    I have been trying different ways to get some maple flavor into belly bacon so I thought I would try some mapline to see if the intensity of the concentrate would penetrate and bring some flavor. Sad to say it did not. I think next time I will break in down a bit and inject while I cure to see if that will work. I cured these for 10 days and while the bacon is great, it does not have any maple flavor that I can taste.


    As you can see by the date on the bags I reuse them several times. I love the foodsaver unit for this kind of stuff

        Next time I am going to try injecting it into the belly while it cures and see if I can get any flavor that way

          "EXTRACT", must be the only way. I'm sure the maple bacon you buy in the store is just a flavoring. That is my next maneuver anyway, I bought the maple extract, just need meat.
