Well after 19 days a curin the ham be ready ta smoke.

The cure has picklin spice, brown sugar, salt, onion powder an cure #1 plus a couple a secrets.

Was a wet cure to.

Just checked on it, lookin good, got a ways ta go yet.

I share 99.8% a everthin I do with yall. But this en an the shoulder bacon I just gotta keep in the smoke box. Yall would be amazed, there ain't anythin supper special in there, but, it's in there!:cool:

Sliced fer a taste test. Very good, not salty at all. Has a sweet nutty flavor to it. Nice an juicy. This one be a keeper. Might try one that be boneless next.

Looks great to me. I have done whole hams before, I prefer the bone-in over boneless anyday. The marrow in the bone as it cooks out adds a very unique flavor that no brine, seasoning, marinade or wood can duplicate. With Easter next month and another contest I am sure we will see lots of these being smoked.

I don't think you could have had a better example to show all of us here, you did fantastic.

CA, sorry, some how I missed this!

It took bout 11 hours ta smoke. I don't thin the curin affected the time much. As fer a stall, there was a short one, but each peice a meat is different, the next one could have a longer stall er a shorter one, ya just never know.

Steve, I didn't hang this en, when I get the new smoke house built, I will hang them from hardwood dowels an use ham bags.

Then I will be able ta cold smoke, this one took bout 11 hours runin the GOSM as low as it would go.

so, then, no hang this time between cure and smoke, cept for forming the pellecle........did you mention doing that?
