LMAO! Spit on my keyboard and everything!!
Awesome ham Tip!! I need to try one of those.
davidmcg 03-02-2009, 04:43 PM Looks great to me. I have done whole hams before, I prefer the bone-in over boneless anyday. The marrow in the bone as it cooks out adds a very unique flavor that no brine, seasoning, marinade or wood can duplicate. With Easter next month and another contest I am sure we will see lots of these being smoked.
I don't think you could have had a better example to show all of us here, you did fantastic.

How long did you smoke it ?
And do cured butts cook faster than uncured butts ?
ie no sticking points ?
Walking Dude 04-07-2009, 02:58 PM Tip, no pics of it hanging........or how long, or HOW you hung it.............

CA, sorry, some how I missed this!
It took bout 11 hours ta smoke. I don't thin the curin affected the time much. As fer a stall, there was a short one, but each peice a meat is different, the next one could have a longer stall er a shorter one, ya just never know.
travcoman45 04-07-2009, 06:12 PM Steve, I didn't hang this en, when I get the new smoke house built, I will hang them from hardwood dowels an use ham bags.
Then I will be able ta cold smoke, this one took bout 11 hours runin the GOSM as low as it would go.
