  • It's Not a Sandwich, it's A MEATWICH!

    Had a strong craving for Tri-tip a while back, and happened to find a choice specimen at Ralphs, which is somewhat unusual. Nonetheless, it saved us from a trip to the madness known as Costco.



    Here it is after 1.5 hours with a reverse sear over oak:



    As soon as I began slicing through that meat, an idea began brewing:




    I think I will build a GIANT french dip sandwich:

          Beautiful specimen is right! I could only dream of finding a tri-tip around here that looks half as nice.

                That's right there (tomorrow - lol) (meat looks a tad 'rare' - I can still hear it moo ;-) but that's a sandwich to treasure for sure !
