  • My spares St. Louis style

    This is my second attempt at cutting the spares into St. Louis style. The first time turned out well I thought. The method of trimming is fairly cut and dry...no pun intended!


    The spares knuckles and flaps trimmed. These trimmings make for good pickins, while the ribs are finishing their cook.

    Rubbed up with some Wild Willies #wonderful.

    I like the new front page layout!!

              These are the spares aprox. 3.5 hrs., over olive and mesquite.
              Ribs ready for foil (5 hrs @ aprx 240*).

              On the plate @ 1 hr, after foiling. .......My bad got carried away ...leftover pics...lol. Smoked the potatoes as well, accompanied by "The" Cherry Chipotle sauce....Yeah bud!

                    picked up a couple of packs of spares at kroger yesterday froze one got the other for later this week. got em for a 1.99 lb

                        Thank you all! Those ribs were very tender. Although I didn't use "Optimus Prime" for this smoke. ( Sorry Brian) I messed around with the reverse flow on wheels I am building. Worked well. "Optimus Prime" is in the shop getting a few upgrades. Dampers and what not. Smoke on!
