I found a great local source for these meaty natural fresh pork bellies. It is in a small hill country town not too far from here. They make uncured bacon for the whole foods stores around here. I buy 4 bellies at a time for $1.50 per pound. Already skinned and squared. I did not trim one speck off of these. They are only days old from slaughter.
Now if I can pull of a cold smoke this weekend. Supposed to be 70 at night and 90 during the day.
